SOUTH BEND — American Pancake House must pay $1,400 in civil penalties and fees after a Sept. 2 health inspection found multiple temperature, cleanliness and maintenance violations in the Grape Road restaurant.
St. Joseph County Health Officer Dr. Thomas Felger said the temperature violations are particularly concerning.
"We've never traced a food-borne illness back to your facility, but this is how it starts," Felger told owner Zoi Kladis on Monday.
The restaurant had 10 critical health code violations, as well as 12 non-critical violations. Of those, four were repeat violations. In addition to the fines, the restaurant was placed on six months' probation.
Kladis said that most of the equipment problems have been fixed, or will be fixed within the next few days. A malfunctioning refrigerator unit sent temperatures of some foods into dangerous territory. However, some of the temperature violations, such as eggs stored at room temperature, were because her kitchen staff weren't trained properly, she said.
The restaurant was also fined for some poor storage and misuse of chemical containers — some of which were used to store flour and sugar, according to the inspection report.
St. Joseph County Health Department administrator Nick Molchan questioned Kladis on implementing cleaning and maintenance schedules. Kladis said she's spoken with all of her managers, who in turn keep track of cleaning and maintenance around the building.
"A lot of these were written up in the past," Molchan said. "It shouldn't be waiting until we show up."
Hibachi Grill
Last week, staff from Hibachi Grill off of Grape Road were also called into a health officer's hearing. Violations were found after health department staff conducted an inspection because of a customer complaint.
According to the inspection report, live cockroaches of all sizes, as well as dead cockroaches, were found in cabinets near the buffet, and on the floor and shelving of the back stock area.
Hibachi Grill also had temperature violations, including fresh melon and mussels on a cold buffet registering too warm for safe consumption. Some chicken dishes on the hot buffet did not measure warm enough for safe consumption.
Food storage was also an issue, according to the report. Raw meat was stored in plastic grocery bags, and raw meat was stored over items like cream cheese in the walk-in refrigerator, which could lead to contamination.
Felger said the restaurant was charged $800 in fees and civil penalties, and will be placed on six months' probation.

Sadly, there would be few places people would eat if they knew what kitchens really looked like. That being said, these sound deplorable.

The Health Department doesn't get it ... the Hibachi cockroaches were there on purpose (i.e. menu item).
